Its getting cold here and a friend of mine in Northern Queensland reports her husband needed the heater on yesterday.


So why not warm up with some healthy and tasty Pumpkin Soup.


My recipe is quick & easy.


Ingredients - Butternut Pumpkin, Chicken (or Vegetable Stock) - I use Powdered stock and add it to water.


Chop up the pumpkin and place in a saucepan with just enough stock to cover it if you like a thick pureed soup . If you prefer a chunky soup just add a little more stock.


Bring to the boil and simmer until pumpkin is soft.


To serve -

Chunky Soup - Serve with toast as is.



Thick Soup

Allow soup to cool for a short time, then puree with a blender or stick mixer. Add stock according to desired consistency.

Serve with a little sour cream & chopped chives on top for extra flavour.
